Credit for this recipe goes to my better half :). Not sure what to cook for dinner once, he used all we had in fridge that night and created this incredible Spinach 'n' Corn saute!!
All you need:
1/2 cup Button Mushrooms (sliced)
1/2 cup sweet corn kernels
1 medium size boiled potato (chopped)
2 green onions (chopped)
1 medium sized onion (finely chopped)
Cottage cheese(optional)- 2 tbsp
1 tbsp oil to cook
1/2 tsp Cumin seeds
1/2 tsp Coriander powder
1/2 tsp Red chili powder
1 tsp Tandoori Chicken masala
Salt to taste
How to prepare:
- Wash and chop spinach.
- Heat a non stick pan. Add oil, cumin seeds followed by chopped onion. Saute the onions till translucent. Add corn kernels, mushrooms and saute for 1 min.
- Add coriander powder, red chili powder, boiled potato, spinach and salt. Mix all
- Cover the pan for 4-5 minutes and let it cook at medium heat.
- Add cottage cheese, tandoori chicken masala and we are done.
