Egg Rice

Ever wondered about left over plain rice!!! We had a bowl of one after last night's Chinese dinner. First thing that came to my mind was to use it for Egg Rice...


All you need:

1 cup boiled rice
1 small onion chopped
2 tbsp chopped green pepper/capsicum
1 chopped carrot
2 tbsp green peas
4 eggs
1/4 tsp mustard seeds
1/2 tsp red chili flakes
Salt to taste
Oil for cooking


How to prepare:
  • Beat the eggs (3), add salt and red chili powder and make egg scramble. Boil 4th egg for garnish.
  • In a flat pan, heat 1 tbsp oil, mustard seeds & onion, peppers till the onions are light brown in color. Add carrot and peas along with salt & red chili flakes to the pan & cover the pan for 2 mins. Make sure carrots are soft but not over cooked. Now add boiled rice and mix all. 
  • Add egg scramble in the end & serve hot with boiled egg as garnish.


Tip: You can add any other veggies of your choice and make it spicy as per your palette.
