Portobello Mushroom & Roasted Red Pepper Burger

Grilled Portobello Mushroom recipes is a great vegetarian option that we normally get in American dining. Since, I have been longing to cook portobello mushroom myself for quite some time I decided to give it a try this week. At first look, Portobello Mushroom did not appear appetizing, but since I have enjoyed all Portobello mushroom meals like burger, sandwiches, quesadillas etc till now, I decided to go ahead and give a shot to it.

Somewhere my sub-conscious mind relate burgers to the McDonalds entering in India and bringing the burger revolution..lol...I mean the fast food revolution, which led Burgers, Pizzas, french fries to gain popularity over traditional Indian snacks. So this burger is perfect to replace the regular patty with Portobello Mushroom & french fries are replaced by grilled beans to create a healthier option.




All you need:
(Servings: 2)


1 Whole Portobello Mushrooms
1 medium Red pepper

For Marination:
1 tbsp White vinegar
1 tbsp lemon juice
1 tsp salt
1/2 tsp black pepper powder
1/2 tsp dried rosemary
1/2 tsp drie oregano
1 tsp oil

For Garnish & Serving:
2 Whole wheat bread thins/ buns (Any other breads of your choice)
Sliced cucumber, tomato and onions.
1/2 cup Baby carrots
A handful of green beans (Substituted them for regular french fries)


How to prepare:
  • Start with Portobello mushrooms. Take its stem off and wash them.
  • Cut the red peppers in big slices (Like you will get 4 big slices from a medium red pepper).
  • Prepare the marinate for mushrooms and red peppers by mixing all marinate ingredients in a big bowl.
  • Add whole portobello mushrooms and red pepper slices to marinate and let it all marinate for 4-5 hours. In between keep tossing the mushrooms & red peppers or keep drizzling the marinate by using a spoon.
  • If you have a griller, grill the mushrooms or the way I did, I pan roasted them and get a charred skin on top.
  • Similarly grill green beans & red peppers or pan roast the same Till they are done but maintains their crunchiness.



  • To serve add sliced tomatoes, cucumbers & onions with roasted green beans, with your choice of sauce/ dip. I used grilled green beans as substitute for regular french fries, mostly served as side with burgers/ sandwiches.


  • Toast the buns a little, spread hummus on one side, layer it with grilled Portobello mushroom and roasted red pepper and spread light mayo on another side. Grilled Portobello Mushroom Burger is ready to serve, enjoy with any sauce/dip of your choice!!
