This basic eggless cake is one of the super easy and moistest cakes and I made this cake with food colors and it was the first time I was using food colors, so added little but afterwards I made same cake again at my son's 2'nd bday and it was a huge hit!!<br />

<li>For a colorful inside, divide cake batter into 4-5 different bowls. Add food color of you choice.</li>

<li>Bake it for 30 minutes. Check whether cake is baked by pricking a knife/ toothpick in center and if it comes out clean, turn off the oven and take out the baking dish and let it cool for 10-15 minutes before turning the cake on the cooling rack.</li>

I LOVE, love love love Cream Cheese Frosting!! Its like the best frosting after the chocolate frosting and very easy to make. The cream cheese frosting goes well with red velvet cake, carrot cake and more....<br />
<br />
Ingredients:<br />
<br />
8oz or 1/2 Cup Cream Cheese, room temperature<br />
8oz or 1/2 Cup Butter, room temperature<br />
2-3 Cups Confectioners Sugar or Powdered Sugar<br />
1 tbsp Cornstarch( for thickening)<br />
1 tsp Clear Vanilla Extract<br />

Directions:<br />
<ul style="text-align: left;">
<li>In a bowl mix cream cheese and butter with an electric mixer. Start with low speed and mix it well until its blended well and smooth.</li>
<li>Now add cornstarch and start by adding 1 cup of sugar at a time and adding more gradually so that it doesn't blow off in whole kitchen.( In case you don't have powdered sugar you can grind the granulated sugar till its powdered well). Keep adding sugar till desired level of sweetness is achieved. Add more sugar in case the frosting doesn't have stiff peaks or doesn't pipe well (thickened icing gives best result while piping).</li>
<li>Add vanilla extract and mix well.</li>
<li>Cream cheese frosting is ready to use.</li>
<li>Use the knife or spatula and spread over cakes or cupcakes!!!</li>

<li>On a cookie sheet, lay a parchment paper, grease it with oil and keep aside.</li>
<li>In a mixing bowl add eggs, vanilla essence and sugar, mix well.</li>
<li>Add all purpose flour, orange zest and baking powder. Mix all. I prefer to mix by hands and bring it all together, its a little sticky mix but in case you feel its too runny add more flour.</li>
<li>Spread the mixture on greased parchment paper with 1 inch thickness.</li>
<li>Bake it for 20 mins or until the log starts turning golden on edges.</li>

<li>For egg rolls first beat the eggs and add red chili powder/black pepper powder with salt to taste.</li>

<li>Meanwhile add half of the beaten egg mixture on chapati and let it cook by moving chapati ( in circular motion, don't flip) time to time so chapati doesn't burn. When egg mixture start settling, flip chapati and let eggs cook on other side.</li>

<li>Preheat oven at 425 degrees Fahrenheit.</li>

<li>Wash mushrooms and remove the stems. Keep the hollowed whole mushrooms on paper towel, so the excess water is soaked.</li>
<li>To start with filling, heat a pan, add oil and saute chopped onions.</li>
<li>As onion starts changing its color add chopped red and green peppers with salt and red chili flakes and saute all for another minute.</li>
<li>Let the sautéed mixture cool. Once its cool enough, add bread crumbs & parmesan cheese.</li>
<li>Fill the mushrooms with prepared stuffing and keep aside.</li>

<li>Start with Portobello mushrooms. Take its stem off and wash them.</li>
<li>Cut the red peppers in big slices (Like you will get 4 big slices from a medium red pepper).</li>
<li>Prepare the marinate for mushrooms and red peppers by mixing all marinate ingredients in a big bowl.</li>
<li>Add whole portobello mushrooms and red pepper slices to marinate and let it all marinate for 4-5 hours. In between keep tossing the mushrooms & red peppers or keep drizzling the marinate by using a spoon.</li>
<li>If you have a griller, grill the mushrooms or the way I did, I pan roasted them and get a charred skin on top.</li>
<li>Similarly grill green beans & red peppers or pan roast the same Till they are done but maintains their crunchiness.</li>

Mangoes are one for my favorite fruits.. In fact I can have mangoes anytime :) A few days back, I was looking for some mango dessert recipes & bookmarked a few too. Lately I found this <i>Panna cotta recipe</i> through <a href="http://allrecipes.com/recipe/panna-cotta/">Allrecipes.com</a>. I decided to modify the recipe a little and prepared on my own a <span style="font-size: large;">Mango Panna Cotta!!! </span> It's an easy dessert, which does not require any baking and can be prepared with little cooking.<br />

<li>Prepare mango puree by pureeing fresh mango in mixer /grinder and then filter the puree through a strainer (can substitute with store bought puree). Add the mango puree to the prepared mix. </li>
<li>Pour the mixture in your choice of glasses. Add a few mango cubes too. Keep glasses a little empty so that you can decorate on top.</li>
<li>Refrigerate until set. Usually it takes 4-6 hours.</li>

<b><span style="color: #351c75;">How to prepare:</span></b><br />
<ul style="text-align: left;">
<li>For Bhaji, add all the vegetables & salt in pressure cooker and cook up to 3 whistles. If you dont have a pressure cooker, boil all the veggies till they are soft. Mash boiled vegetables by a masher.</li>
<li>Now heat a big pan, add butter, garlic & chopped onions and caramelize.</li>
<li>Once onions are light brown in color, add tomatoes and saute all. </li>
<li>After 2 mins when tomatoes start cooking add chili powder, coriander powder, amchur powder, green chillies and pao bhaji masala. Saute this for another 3-4 mins on medium flame till it starts leaving oil on edges. </li>
<li>Add boiled and mashed vegetables (bhaji) to the prepared tempering & mix well. In case the mix is too thick add water.</li>
<li>Mix all, cover the pan and let it all cook for another 5 mins and keep stirring the bhaji in between to prevent from sticking at bottom.</li>
</ul>
How to serve:</div>

<li>Just before serving, on a heated flat pan, toast the sliced buns with butter.</li>
<li>Serve the toasted buns with hot bhaji, dash of butter. Garnish with lemon and sliced onions.</li>
